Chocolate Orange Ooze Cupcakes

Filling:
- 8 oz. Cream Cheese; softened
- 1 egg
- 1/3 cup of sugar
- Yellow and red food coloring
- 6 oz Chocolate chips
In a small mixing bowl, combine cream cheese, egg and sugar. Blend in 2 drops of yellow food coloring and one drop of red food coloring, adding color if necessary to reach desired shade. Use a mixing spoon to stir in chocolate chips, set filling aside.
Cupcakes:
- 3 cups of flour
- 2 cups of sugar
- 1/2 cup cocoa
- 2 ts of baking soda
- 1/2 ts salt
- 2 cups of water
- 1/2 cup plus 2 tbs vegetable oil
- 2 ts cider vinegar
- 2 ts vanilla
In a large mixing bowl combine flour, sugar, cocoa, baking soda, and salt;
set aside.
In a small mixing bowl combine water, vegetable oil, vinegar and vanilla.
Add contents of small bowl to the large bowl and stir with mixing spoon to
combine.
Fill cupcake inner halves with batter, then place one teaspoon of the filling at
center. As cupcakes bake the batter will rise to surround the filling.
Preheat the oven to 350 degrees. Bake for about 25 minutes.
And after that you should have some really fun and tasty cupcakes.
