Eyeballs

Makes 35 eyeballs.

Ingredients:

1/2 cup butter, softened
1 1/2 cups peanut butter
1 lb icing sugar
1 tablespoon vanilla extract
12 ozs white chocolate

Instructions:

Mash the butter and peanut butter together (fun for the kids!).

Add the icing sugar and vanilla and mix thoroughly.

With your hands, shape into small 1-inch balls and refrigerate on waxed paper for half an hour.

Melt the white chocolate over a double boiler or just use the microwave.  If using the microwave, heat for 5 to 10 seconds, remove and stir and then another 5 seconds, remove and stir, etc until it's melted.

With a toothpick, dip the "eyeballs" into the chocolate, covering all but a small circle on the top.

Let cool on waxed paper.
